Since my last post my husband and I have moved to another county in Maine. I will be working on adding a crafting corner to my page, so that I can share what handmade creations I have been creating. I have had some great adventures in food, crafting, and creating since I have last logged on. I hope that all of you who have stumbled onto my page will take a moment and look at all the new creations (food and crafts) that I will be adding to my current page. Stay tuned for me!!!

I'm sure there are those of you who are like me and feel great when you take that first sip of hot tea. Especially on a cold blustery day when you feel like you cannot get warm. Have you ever felt that way? The wind is twirling the freshly fallen snow in the backyard and I'm looking across the miles of potato fields wondering what's next.
Have you ever looked at your situation and felt that you just need that one little thing to start you on your way to that next step? I do not mean just taking your life to that next step, but maybe your career, your dreams, or just taking that creative leap of faith. We are all looking for different outlets to satisfy our creativity, but doing that successfully is sometimes hard. Is there a way for our lives to have that balance? The balance of happiness, and satisfaction in what we do every single day, which in essence makes us who we are. We want to be those who stand out and make ourselves known. Who doesn't want to make a difference in some way or another? We want to do what make us the most happiest and gives us that sense of accomplishment. How do we get to that point? I love working in the medical field, but I have a great passion for food. I have always said that if I could make a modest living doing what I love I would be the happiest person in the world. For those of you who might know me I'm already very happy. Who knows what would happen if I made that leap into the baking business. Would I have the following? Do I have the skills needed to work for myself? I think I might be sickening to be around being so darn happy, but I would be doing what I love! What is more important than that? Some of you may say "money" fool, but having the ambition to do what you love will pay off in the end with hard work and determination. Nothing in life is every easy and knowing when to take that next step is near impossible to know. I'm going to go with the thought that when things start falling into place I will jump on that rolling wagon head first and go for it. I wonder when that will be? Well my tea is finished and so am I. County Creations had the opportunity of catering a wedding back in August of 2012. This was the most wonderful experience, one that gave County Creations the honor of being in the January, 2014 edition of "Real Maine Weddings". The cake I made for M & B's wedding, was a lemon pound cake with vanilla buttercream and fresh Maine blueberries. The cake was accompanied by 200 cupcakes, which were the same as the cake. I have never been so excited to see my creation in a magazine. I hope in the future County Creation's will cater even more weddings and make more memories like this one. So this week is dessert week, and if you know me you know I"m in heaven. I enjoy baking yummy desserts more then anything. So I have several different goodies that I"m baking this weekend. I'm going to make a fresh blueberry and lemon cheesecake, Cream Cheese Pound Cake Cupcakes with a Yellow Mango Butter Cream, Banana Whoopie Pies with a Peanut Butter Cream, and maybe some fruit filled puff pastries. This is going to be a great weekend and I just can't wait for it to begin. I hope that all of my friends at work, come to work hungry on Monday because somebody's going to have to eat all these desserts I'm making. I will keep you all posted on the dessert progress and I will let you know when all of them are posted on my site. So keep stopping to check things out. So here is one of this weeks submission. I made a fantastic Santa Fe Rice with Sausage. It was so delicious and I will be making this over and over again. Check out the video and tell me what you think.. So this week I made a Squash Casserole and my version of a Cheddar Bay Biscuit. Take a look at the video and tell me what you think.. Well it's been a while since I posted, so now here goes. I decided that I was going to enter the Real Women of Philadelphia contest. This is a contest that's being put on by the makers of Philadelphia cream cheese and Paula Deen. It's a competition where you can showcase your creations, using the star of the show Philadelphia Cream Cheese. I had such a wonderful time making the video clip for the first week, which was an appetizer that incorporated Philly cream cheese. This is an eight week competition, where every week there is a different dish to be made using the Philly. If I was to be chosen as a winner, I would have the opportunity to go to Georgia for the finale. Well wish me luck everyone, and here is my video of "Cucumber Cups with Philadelphia Cream Cheese and Balsamic Drizzle". This is the first time I have ever done this so the video isn't the best, but I will have the opportunity to improve as the weeks progress. I will keep you all posted as to when I submit my next recipe. Well I did all the cooking that I wanted to do this weekend yesterday, so now I just don't know what to do with myself. So I'm thinking about what's for supper. I started off thinking I should make something with the egg noodles that are sitting on the shelf and then I thought well I have some turkey burger that I could use.. Then I got the idea to make some mini homemade turkey meatballs, fry them off, and let them simmer in my homemade pasta sauce that's now simmering on the stove. I made a chunky sauce that has lots of onion, celery, garlic, and shredded carrots in it... I also put some diced tomatoes in the sauce, which are always a good addition. It smells great in here right now and I'm sure that the smell will be even better once I start to cook off the meatballs. I will let you know how it all turns out later...Maybe I will even take a picture of this concoction so you can all see what it looks like... I can't wait for supper now.
Well this weekend I decided to make the Pumpkin Cheesecake that I was unable to make last weekend because I forgot to buy the pumpkin while at the store...lol I have to say that it looks and smelled delicious cooking but I won't know how great it is until it has set for the night in the fridge. I made the crust out of Nilla Wafers, graham cracker crumbs, cinnamon, nutmeg, and ginger. The cheesecake also has some crushed pecan baked into it. I can't wait to try this tomorrow. For the cookie part of the weekend I made some Oatmeal Peanut Butter Cookie Sandwiches. These melt in your mouth cookies are filled with a creamy peanut butter confection. These cookies sandwiches have a wonderful peanut butter flavor and the oatmeal adds a great texture. For the bread part of the weekend I made some Maple Molasses Oatmeal Bread. I just took this bread out of the oven and the smell is to die for. You can smell a hint of maple wrapped around the rich aroma of molasses. I used whole wheat flour for this yeast bread as well as sugar free maple syrup. I can't wait until the morning when I can try a piece of this bread with breakfast. I will have pictures of all my goodies for you tomorrow. I hope you all come back and check them out.
